Robert Hartstein understands hospitality in a holistic way that few are capable of because his career arc has been both broad and deep. With over 30 years of award-winning experience in restaurants, hotels, and country clubs, Robert has done world-class work in almost every role. He worked in some of New York and Southern California’s finest kitchens. Robert’s success in the kitchen lead him to kick-off his own project Blue Velvet, which captured numerous accolades, including Jonathan Gold’s list of Top 99 and a James Beard nomination for Best Chef. Next, Robert turned to the next chapter in his professional development working with prominent hotels and country clubs. From General Manager and Director of Service for the Langham Huntington Hotel’s dining room to the Director of Food and Beverage for the Viceroy Hotel and the Los Angeles Country Club, Robert learned how to build teams that create exceptional guest experiences. Today, Robert blends expertise in how kitchens make great meals with how Front-of-House service teams deliver sophisticated warmth to create Hospitality Collaborative's signature Virtuous Hospitality.
